Today I made a variety of foods to take us through main meals at the beginning of the week.
One of the items is an onion soup. A friend gifted me with several large yellow onions that are perfect for soup. I wanted to add a bit of a twist to French onion soup because I don’t often eat cheese or toasted bread, which are sometimes the main attraction with this classic soup.
Instead, I decided to add in a variety of tasty, fiber-filled additions: carrots, celery, home-dehydrated tomatoes, a few mushrooms, and lots of homegrown garlic. Then, to spice it up, I added a heaping spoonful of fresh salsa when I served up a bowl.
This soup is now loaded with fiber and honestly, I didn’t miss the cheese or the toasted bread. There are at least 4 more servings left and I know it will go well with leftovers from the cod I will make tonight and the chicken I will have tomorrow.
With the addition of a field greens salad, I will have lots of fiber, vitamins, minerals and deliciousness on my plate and in my bowl for the next few days.
